Aubergine Chutney
|
Ingredients
1 Large Aubergine (Eggplant)
3 to 4 tbsp Vegetable Oil
5 Garlic Cloves, crushed
1 Onion, finely sliced
Salt
2 dried Chillies, chopped
1 teasp Wine Vinegar
1 tbsp Freshly chopped Coriander
Cooking Instructions
* Rub the aubergine with a little bit of oil and put it on a preheated grill it until soft and brown on all sides.
* Peel off the skin from the aubergine, place the flesh in a bowl and mash to a pulp.
* Add the sliced onion, garlic, salt, chilies and vinegar and mix well.
* Sprinkle with the chopped Coriander to garnish.
