Special Fried Rice
|
Ingredients
4 tblsp oil
125g diced chicken breast
125g diced fish fillet
125g prawns, cut into pieces
2 large beaten & seasoned with salt & pepper eggs
1/2kg boiled in salted water and drained basmati rice
Soy sauce
Chopped shallot
Salt
Pepper
Finely shredded cabbage
Grated carrots
Cooking Instructions
* Heat oil in a large pan or wok and stir-fry chicken pieces seasoned with soy sauce and pepper until the chicken is slightly golden in colour.
* Add fish and prawns, season again with soy sauce and pepper and continue to stir-fry for 1 or 2 mins. Then add the Finely shredded cabbage and the grated carrots.
* Keep the fried ingredients to one side of the pan. Put in 1 more tablespoon oil and pour in the beaten eggs.
* Keep stirring the egg until it set in threads. Mix with other fried ingredients.
* When well mixed, add the half cooked rice, sprinkle over soy sauce and pepper and stir-fry to heat through.
* When rice is hot, sprinkle over chopped shallot, mix well and remove from heat.
