Chilli Pickle
|
Ingredients
750g chillies
1/3 cup sugar
2 tsp salt
1 tbs white peppercorns
1 1/4 cup cider vinegar
1 cup water
3 slices or garlic
Cooking Instructions
* Wash the chillies.
* Bring a pot of water to the boil.
* Plunge approximately ten chiles into the boiling water for twenty seconds, remove and place into iced water to cool them or laternatively leave them for some time in the sun (1-2 hours)
* Repeat as required.
* Wipe chillies dry and to remove any fine outside skin.
* Pack into preserving jars.
* Bring all other ingredients to the boil, stirring until the sugar and salt have dissolved.
* Remove from the heat and allow to cool.
* Pour over the chillies and seal in a bottle or jar.
* Leave the chillies to stand for a few days to ferment.
